This is a specialty of Saigon where I was born. It's called “Cơm Tấm" in Vietnamese. A complete dish has more ingredients than what I make here, but this is already more than enough and very quick to make. It only took me about 30 minutes to prepare, so it's a perfect choice for busy weekdays.

Coca Cola 1 c.
Sesame Oil 0.5 tbsp.
Brown Sugar 1 tbsp.
Soy sauce 1 tbsp.
Fish Sauce 1 tbsp.
Garlic 2 cl.
Salt 0.5 tbsp.
Honey 1 tbsp.
Spring Onion 1 pc.
Tomato 2 pc.
Butter Lettuce 100 g.
Egg 4 pc.
Pork Chop 2 pc.

Instructions

  • Cook rice in a rice-cooker.
  • Marinate pork chop with:

    • 1 tbs of honey
    • 1/2 tbs of salt
    • 1 tbs of minced garlic
    • 1 tbs of fish sauce
    • 1 tbs of soy sauce
    • 1 tbs of brown sugar
    • 1/2 tbs of sesame oil
    • 1 cup of Coca Cola
  • Rub the marinade on both sides of the pork chop and set aside for 3 hours or overnight in the fridge.
  • Preheat the oven to 190 degree Celsius. Line the baking tray with aluminum foil and bake the pork chops for 15, then turn them over and bake for another 15 minutes.
  • Our oven was broken so I pan-fried them with 1/2 tbs of olive oil for 20 minutes, and they turned out great. Cook each side on the lowest heat. When both sides are golden brown, turn the heat to medium and cook each side for about 1-2 minutes to get a good, crisp sear on your chops.
  • You can also grill them on char coal, but it is not the best option for quick dinner.
  • While the pork chops are being fried/baked, prepare sweet fish sauce and spring onion oil.
  • To make sweet fish sauce: combine water, sugar, lime juice and fish sauce, and mix them well in a small bowl. You can adjust the flavours to your liking by adding any of the above ingredients. A good sauce must be a balance of sour, sweet and salty. Top with minced chillies for spicy flavour.
  • To make spring onion oil: Put minced spring onions in a small bowl and add 1/2 tbs of salt and 1/2 tbs of white sugar. Heat vegetable/olive oil on a pan until almost smoking. Carefully pour the heated oil onto the bowl of spring onions. There would be a little bit of splash and sizzling. Wait for a few seconds and gently mix it.
  • Cook some sunny-side up eggs. When eating, the combination of rice, egg yolks, spring onion oil and sweet fish sauce would make you realize that “Happiness is right here and right now.” At least it did to me. lol
  • To assemble the dish, first put some lettuce leaves on one corner of the plate, and then add tomato slices on top of them. Spread rice on the plate. Pork chop and eggs are on top of rice. Finally, serve with Vietnamese sweet fish sauce and spring onion oil.
